The nativity in a medieval miniature

Ingredients: parchment paper, 1 kg of wildflower apples, 1 kg of almonds, walnuts or hazelnuts, 1 lemon, mixture of spices, 1 teaspoon of ginger powder, 1 pinch of pepper, a nice teaspoon of cinnamon powder, 1/3 of a teaspoon of clove powder. Heat the honey gently and skim it well. Coarsely grind the almonds or other nuts. Add the almonds to the honey and cook, stirring constantly. It takes 30 to 45 minutes of cooking over low heat, always stirring. The preparation is ready when you hear them crackle slightly due to the heat, but you have to be careful not to let them burn, otherwise it becomes black and tastes slightly bitter. The spices are added twice during the preparation; 1 teaspoon of mixture at the beginning and the rest at the end of cooking. When the nucato is cooked, spread it on a pastry plate or on a non-stick pizza pan, preferably covered with a sheet of parchment paper.Use the cut of half a lemon to roll out the boiling dough.> Article taken from:sguardosulmedioevo).
