Crepes

In this post I present to you the ancient recipe for preparing the tasty c respelle with black truffle , all to try.
Here's how to do them.
Ingredients (for 4 people):250 ml of milk, 125 gr. of flour, 2 eggs, 150 gr. of sliced cooked ham, 150 gr. of sliced fontina cheese, 100 gr. of champignon mushrooms, 70 grams of bechamel, 100 grams of grated Parmesan, 20 gr. of butter, 70 gr. of black truffle, a little nutmeg, a pinch of salt and pepper.
Proceed as explained below.
Blend the milk, eggs and flour together until smooth, then add salt, nutmeg and pepper to taste.
Let the dough rest, then cook the omelettes in a pan sprinkled with oil.
Cut the mushrooms into rather thin strips and sauté them for a few minutes in a pan over medium heat with a little butter.
Add the salt.
Put a slice of fontina and a slice of ham on each crepe, then distribute the strips of mushrooms and a few slices of truffle.
Shape the crepes into triangles by folding them in half a first time and then a second time, then place them on a greased baking tray and pour over the béchamel, parmesan and a few slices of butter.
Leave to brown in the oven for 5 minutes and serve the pancakes hot together with a few slices of truffle (Photo gives:salepepe.it).
