What did most white southerners do for work?

The vast majority of white southerners were farmers. In 1860, over 80% of the white population in the South lived in rural areas and was engaged in agriculture. While some white southerners owned large plantations, the majority were small farmers who owned or rented modest-sized farms. These farmers grew a variety of crops, such as cotton, tobacco, corn, and wheat, and raised livestock such as pigs, cattle, and horses.
