Why is the American eagle on US gold coins?

There are no American Eagles pictured on US gold coins. The American Eagle is the name given to US bullion coins minted in gold, silver and platinum at the United States Mint. The US Mint was created by Congress in 1792 and is responsible for producing all US coins. The American Gold Eagle coin was first minted in 1986 and features a bald eagle on its obverse side and a woman personifying Liberty on the reverse.
