Cook in a “bain marie “ means to immerse the one containing the food in a container of hot water, in order to prevent it from coming into direct contact with the flame.
It is a widespread cooking system, whose name apparently has biblical origins.
It appears that Miriam (Mary in Egyptian), sister of Moses and Aaron, was the first to experiment with this method, hence the term to define it, which has come down to us.
