Ancient Greeks in the kitchen
The ancient Greeks called it artolagano , we could define it as a sort of white pizza perfect to accompany many dishes:below is the recipe.
Ingredients: 1/2 Kg. of flour, 25 gr. of yeast, a few tablespoons of olive oil, 100 gr. of lard, a little white wine, a little milk, salt and pepper to taste.
Crumble the yeast in the milk and lard, then add the salt, pepper and add everything to the flour.
Put the mixture in a suitable well floured container and let it rise in a warm place.
When you see that the volume of the dough has roughly doubled, deflate it and add the oil.
Let it rise again, deflate the dough again and place it on an oiled pan to let it rise the last time.
Add a little more oil and cook for 20 minutes.
Remove the pasta from the oven, cut it into squares if you want and serve.
